Chocolate Muffins
Breakfasts are the *most* important meals of the day and I am one among those people who can just not live without a proper breakfast every morning. Nevertheless, breakfast is most neglected and disregarded by people.
Chocolate Cupcakes/Muffins
These Chocolate cupcakes/muffins are another of my favorite breakfasts. Bake them on the weekends and store in air tight plastic boxes in a single layer, so that your breakfast for atleast a week is ready for you to just pick and go, and what more, these are butter free! They keep well for around a week or so.

Chocolate Cupcakes/Muffins
Ingredients:
All-Purpose flour – 2 cups
Unsweetened Cocoa powder – 1/2 cup
Baking powder – 2 tsp
Salt – 1/4 tsp
Milk – 3/4 cup
Canola Oil – 1/2 cup
Granulated Sugar – 1 1/4 cup
Honey – 1 tbsp
Eggs – 2 large
Semi sweet chocolate chips – 1/4 cup
Method:
1. Preheat oven to 350 F.
2. Spray a 16 muffin-pan or individual muffin cups with cooking oil, or line with foil or paper cups.
3. Sift the flour, cocoa, baking powder and salt into a large bowl.
4. Beat the oil, sugar and honey in a large bowl in a food processor or using an electric mixer at medium speed for 2 minutes.
5. Add eggs, one at a time, until just blended after each addition. With mixer at low speed, gradually beat in the dry ingredients, alternating with the milk. Stir in the chocolate chips.
6. Spoon the batter into the prepared cups.
7. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
8. Cool the muffins on racks.

Hey Mona, thanks for bringing our exquisite Hyderabadi cuisine to masses and cooking up such wonderful dishes. I have been a regular visitor to your blog for past 2 months now. These chocolate muffins look awesome, but i read in the intro that it is butter free but in the receipe you mentioned to add butter? Please clarify?

Fatima, you can brush/spray the muffin cups with a few drops of oil instead of butter. Or if you are using paper-cups (available easily in the stores) in the muffin pan, you don’t even need to oil/butter them. ~Mona

hi mona,id like to know if v cud bake this batter in a cake bakin dish instead of muffin cups,also cud v use salted butter n skip the salt n oil n how much wud b required ?also cud v half the proportions for 8 muffins?lastly ny tea cup or mug wud b ok or is there any standard cup required to follow the measure ..

Sas, I have not tried baking a cake out of this batter, I use a different recipe for Chocolate cake. You can find the recipe for Chocolate cake in the Recipe Index of my blog.
You can use salted butter and skip the salt.
For baking purposes I suggest you buy a set of measuring cups and spoons. They will be very helpful. I use them while baking.
Use oil as required in the recipe.
You can halve the ingredients for 8 muffins. ~Mona

I tend to agree, I need my breakfast more than lunch or dinner, makes sure my day goes well.
These muffins look super, how about if I substitute all purpose flour with whole wheat flour?

lovely cupcakes..i always wanted to make them..but dint yet buy those muffin moulds…hey mona..i tried ur fish manchuria…it was awesome..i made a little variation with it…my husband loved it…plan to make it at my upcoming party….thanks for sharing
