Pasta and left overs go well with each other. Especially when we homecooks, dont feel like being in the kitchen for longer times. I had many left over cut vegetables and some chicken in the refrigerator, so I thought of preparing a simple one dish meal adding pasta to it.

Spiral Veg-Chicken Pasta

You can enjoy this it at lunch, dinner or even at breakfast. You can even pack it in a lunch box and have this healthy and filling meal for lunch. Here goes the recipe:

Spiral Veg-Chicken Pasta

Serves : 3

Ingredients:

  • Canola Oil – 2 tbsp
  • Chicken breast pieces – 250 gms, cut into 1 or 1 1/2 cm cubes
  • Yellow Onion – 1 cup, finely chopped
  • Ginger Garlic paste – 1 tsp
  • Baby Carrots – 3/4 cup, sliced thinly
  • Green capsicum – 3/4 cup, chopped
  • Red capsicum – 3/4 cup
  • Cabbage – 3/4 cup
  • Tomato Paste – 1 tbsp
  • Water – 2 cups
  • Maggi Chicken Bouillon-Halal -2 cubes
  • Dry roasted Coriander seed powder – 1 1/2 tsp
  • Cilantro – for garnish
  • Spiral pasta – 250 gms

Method:

To Prepare the Pasta Sauce-

  • In a pan on medium heat, pour oil and put the cut chicken pieces. Stir fry it for 5 minutes.
  • Now add the chopped onion. Fry it till it is translucent in colour. Then add ginger garlic paste and stir it well for 2 minutes or so.
  • Add all the cup vegetables and sprinkle a little bit of salt over it, maybe a big pinch, just to enhance the colour of the veggies. Stir fry the contents in the pan for about 5-7 minutes. Then add the tomato paste, water and the cubed chicken stock. Break the cube once it softens up and mix well.
  • Cover the pan so the the chicken and vegetables soften up and absorb the flavours. The pasta sauce is ready.

To prepare the Pasta Dish-

  • Prepare the Spiral pasta according to the instructions on the package.
  • When you drain the pasta once it is done, reserve a cup of water and drain off all the remaining pasta water.
  • In a bowl at medium heat, pour the earlier prepared pasta sauce, the reserved cup of pasta water, and the drained pasta.
  • Mix well to coat the pasta with the sauce. Cover and simmer for about 2 minutes.
  • Sprinkle with fresh coriander powder and garnish with fresh coriander/cilantro leaves and serve hot.

Tuna Cutlets

Canned Tuna is a staple in my home. There are always a few tins stacked up in the pantry that come handy to me at times when I am in the mood of a quick fix.

Serve these cutlets as snacks with tomato ketchup, or as a side dish with Rice or Parathas.

Tuna Cutlets
Makes: 26 cutlets

Ingredients:

Canola Oil – 2 tbsp
Yellow Onions – 2, large size, finely chopped
Green chillies – 10-12, finely chopped
Tuna Flakes – 2 tins
Salt – 2 tsp
Red Chilli powder – 2 tsp
Garam Masala – 1/2 tsp
Black Pepper powder – 1/2 tsp
Potatoes – 3, boiled, peeled, and mashed
Egg Whites – 3, whipped
Bread Crumbs – 2 cups
Canola Oil – as needed for shallow frying the patties

Tuna Cutlets/Patties

Method:

  • In a non stick heavy bottom pan on medium heat stir fry the onions and green chillies in oil till the raw flavour of onions is lost and they are translucent.
  • Add the drained tuna flakes to the pan. Mix and let it cook for almost 20 minutes till the tuna is light brown in colour. Keep strring it occasionally ensuring it doesnt get burned.
  • Add salt, red chilli powder, black pepper and garam masala.
  • Add the mashed potatoes to it mix well.
  • Keep stirring it continuously and let it cook for 7 minutes more.
  • Once ready, keep aside and let it cool.
  • Make small patties of the cooled mixture.
  • Pour the whipped egg white in a cup and bread crumbs in an another cup.
  • Dip the patties once in the egg white, then in the bread crumbs and store them in a plastic box if you want to store some, and arrange remaining on a tray to fry them.
  • Pour oil in a pan shallow fry them till brown on both sides.
  • Serve them hot.

Instant Light Chicken Biryani

My earlier version of Chicken Biryani was the traditional kind, but I learnt this version from my Mother in law and is very light and has lesser calories and gets prepared quite quickly when compared to any other type of Chicken Biryani’s. As this Express Cooking Event calls for a meal to get ready in less than 30 minutes, I have used left over cooked plain rice, you guys can always make it fresh if you do not have left over rice. Its a complete meal with Biryani, a dessert, and a juice, and is filling but light on stomach.

My Version of ‘Instant Light Chicken Biryani
Serves – 2

Ingredients:

Canola Oil – 1 tbsp
Chicken Breast – 200 gms, washed, and cut into 2 cms cubes
Salt – to taste
Red Chilli powder – 1 tsp
Yogurt – 1 tbsp
Tomato paste – 2 tsp (optional)
Ginger Garlic paste – 1 tsp
Garam Masala – 1 1/2 tsp
Dry roasted Cumin seed/Zeera powder – 1 tsp
Dry Roasted Coriander/Dhaniya seed powder – 1 tsp
Water – 1/2 cup
Lemon Juice – 2 or 3 tbsp ( as you like)
Saffron threads – a pinch, soaked in 1/4 cup warm milk
Cooked Plain White Rice – 3 cups
Crispy Fried Onions – 2 tbsp

Method: ( Target time to prepare the whole meal – 30 minutes )

1. Put a heavy bottom pan on medium heat, and pour oil into it.
2. Add the chicken pieces, salt and red chilli powder, and fry till golden brown on all sides. This takes probably 7 minutes. When the chicken cubes has been browned properly, adjust the heat to medium high add the yogurt, tomato paste (optional) and ginger-garlic paste and the three dry masalas and stir well. This will take about 5 minutes. Now add half cup water and lemon juice. Cover the lid of the pan for 2 minutes until the water dries up.
3. Now arrange the half of the rice in a microwave safe bowl in a layer, add the cooked chicken breast from the pan on top of the rice in a layer, again arrange the remaining rice layer on top. Sprinkle the fried onions on top and pour the milk with saffron threads evenly on top of rice. All this takes about 5 more minutes
5. Cover and microwave for 3 minutes. The Biryani is ready.
6. Serve the Biryani along with and a Juice and Ice Cream for a heartful meal for two ready in about in less than 30 minutes.

Tip: Adding salt to the water in which you cook rice is essential, or else the whole taste of Biryani turns upside down. One tip if you have forgotten to add salt to the water while boiling rice is – stir the required amount of salt in a little quantity of hot water, about half cup or a few tablespoons, and pour this on the biryani evenly. Warm the biryani in microwave and serve immediately.

Soya Ki Subzi

Soya is an excellent source of Protein including all Amino Acids, being the only vegetable whose protein is complete. It is also a good source of Calcium, Vitamins, Omega-3-Fatty Acids and Dietary Fibre. Benefits of Soya include promoting heart health with LDL cholesterol (Bad Cholesterol) lowering claim for soya; preventing Cancer and alleviating menopausal synptoms. Soya are also very versatile. They can be had in the form of Soya nuggets, whole Soya beans, or processed as Soya milk, Tofu or Soya sauce. I buy and store those dried soya nuggets in air tight containers in the pantry for very long periods.

Dried Soya Nuggets ~ Soya nuggets soaked overnight in water

Note: Soak Soya nuggets in surplus fresh cool water for 1-2 hours. Later, squeeze them, drain the water and put the squeezed nuggets in a dry bowl. Add fresh cool water to it and again squeeze them, drain the water and put them in a bowl. Repeat this about 8 times, until there is no lather in the water when you squeeze them while washing them up. This is important, otherwise the lather in soya will cause severe flatulence. So, be careful there.

Soya Ki Subzi / Soya Nuggets in Tomato Sauce

Ingredients:

Dried Soya nuggets – 300 gms – read ‘Note’ above before you start cooking
Canola Oil – 3 tbsp
Yellow Onions – 2, medium, chopped
Ginger Garlic paste – 1 tbsp
Tomatoes – 2, ripe
Cumin seeds/Zeera – 1 tsp
Turmeric powder – 1/2 tsp
Red Chilli powder – 1/2 tsp
Garam masala powder – 1/2 tsp
Salt – 2 tsp
Water – 100 ml
Green Chillies – 1, slit, for garnishing

Soya Ki Subzi – Soya Nuggets in Tomato Sauce

Method:

-Pour oil in a heavy bottomed pan and fry the onions until transparent. Add ginger garlic paste and the chopped tomatoes to it. Stir well and let it cook until it has become soft and mushy. Once cool, grind the above mixture into a paste.
-Heat the remaining oil in an another heavy bottom preferably non stick pan and fry the cumin seeds till they splutter. Now add the ground onion-tomato paste, and stir well to mix. Cook for a couple of minutes. Add the spice powders and salt. Add the squeezed soya nuggets to the pan and stir in water. Bring it to a boil. Reduce the heat, simmer for about 5 minutes and allow the soya nuggets to absorb all the flavours and liquid from the pan mixture. Cook until the gravy is semi-dry.
-Garnish with slit green chillies and serve it hot along with Parathas.

Chatpata Tamatar Chawal

Fresh Tomatoes

This One-Dish meal is healthy and nutritious, and a hit with kids. When you feel tired and do not feel like being in the kitchen for a long time, this recipe goes well, as it does not need any accompaniments, and you can prepare this in a jiffy. You will love it. Comfort food it is! Try it out, and enjoy.

Chatpata Tamatar Chawal – Spicy Tomato Rice
Serves: 5

Ingredients:

Rice – 4 cup
Tomato – 6 medium
Tomato paste – 2 tbsp
Ghee – 1 tbsp
Split Black gram/Urad Dal – 1 tbsp
Split Bengal gram/Chana Dal – 1 tbsp
Small Green chillies – 8, finely chopped
Red Chilli powder – 1/2 tsp
Yellow Onion – 4, medium
Turmeric – 1/4 tsp
Salt – To taste

Method:

1. If you have left over plain rice then you can use it or else cook the 4 cups rice with about 2 tsp salt and keep aside.
2. Slice green chilles, onions, and tomatoes finely.
3. Heat ghee in a pan and add split black gram and bengal gram along with onions, tomatoes, green chilles. Fry well stirring until the dal gets a reddish tinge. Add salt, tomato paste, red chilli powder and turmeric powder and stir well. Cook and let cook for a few minutes until the tomatoes are slightly mushy.
4. Remove in a large bowl and add cooked rice to it and mix it throughly and gently. Reheat it before you serve.
