Chicken with Lychees

This recipe is my contribution to the event – A fruit a month’ AFAM, which the lovely Sig, of Live to Eat, has hosted for this month with Lychee as the fruit of the month. Many people do not know what Lychee are. Lychee is a fruit, mostly grown in China, and known for its sweet tart flavour. This fruit has a rose coloured skin when young, but as it matures, it develops a hard and leathery rind, which is inedible. It comes off easily leaving behind the jelly like, pearly white flesh with a single inedible seed inside. They are available fresh or canned in most asian stores. Anyways, here’s my entry for the event :

Ingredients:

Marination Ingredients-

  • Boneless Chicken Breast Pieces – 500 gms, cut into 2 cm cubes
  • Salt – 2 tsp
  • Black Pepper – 1 tsp
  • Canola Oil – 1 tsp
  • Sugar – 1/2 tsp

Gravy Ingredients-

  • Gram Flour – 5 tbsp
  • Canola Oil – 3 tbsp
  • Red Capsicum – 1/2 of a large capsicum, chopped
  • Green Capsicum – 1/2 of a large capsicum, chopped
  • Ginger Garlic paste – 2tsp
  • Yellow Onions – 1, finely chopped
  • Canned Lychee in Syrup – 1 can, 565 gms
  • Tomato paste – 3 tbsp
  • Water – 2 tbsp
  • Red Chilli flakes – 1 tsp
  • Red Chilli Powder – 2 tsp

Chicken with Lychees

Method:

  • Drain and reserve all the lychees and a cup of syrup individually in two bowls.
  • Marinate the Chicken in the marination ingredients for preferably 30 minutes.
  • Roll the chicken breast pieces in 4 tbsp gram flour and fry till golden brown. Make sure you do not fry them for too long as breast pieces toughen up too quickly.
  • In a pan on medium heat, in a tbsp of oil, stir fry the red and green capsicum for about 7 minutes. Remove and keep aside.
  • In the same pan add the remaining oil and fry the onions till light brown.
  • Add the ginger garlic paste and fry it along.
  • Add the reserved cup of lychee syrup to it and simmer covered for 5 minutes.
  • Now add the tomato paste and the stir fried capsicum to it and mix well.
  • Dilute the remaining one tbsp gram flour in a 2 tbsp water and pour this into the pan. Let it cook till the mixture begins to thicken up.
  • Add the Chicken pieces and the drained lychees, chilli flakes and red chilli powder and give a good stir.
  • Let it cook on simmer uncovered for 5 minutes.
  • Once ready, Serve it hot.

Paratha

Parathas are my favourite variety of Indian flat breads. They are deliciously flavoured with ghee/oil. I prefer oil mostly and restrict ghee only for special occasions.

The combination of Parathas and Kawabs goes very well and is utmost delicious. We usually have Parathas and Rice with curries at meals. Its our staple diet.

Getting the perfect round shape with the correct thickness of each paratha is a bit difficult, but it comes with practice and time. You can use a platter and cut the ends to attain a perfect circular shape for your parathas. But it is not very necessary to get the perfect circular shape always. They are easy to prepare once you get the hang of it.

Paratha – Flat bread

Ingredients:
Makes-7 Parathas

Whole Wheat Flour/Durum Atta – 2 1/2 cups
Salt – 1 1/2 tsp
Water – 2/3 cups
Ghee/Oil – 6-8 tbsp
Extra ghee/Butter/Oil for cooking

Method:

1. Sieve the wheat flour, salt into a mixing bowl or a food processor bowl pour rub in one table spoon ghee. Add water all at once, and knead dough if you are preparing it with your hands for atleast 10 minutes (the more it is kneaded, the lighter the bread will be), or if you are using a processor, use the dough blade and pulse till the dough forms into a ball. Form dough into a ball and cover with clean plastic wrap and set aside for 1 hour.
2. Later divide the dough into 7-8 equal portions and roll each ball one by one on a lightly floured board into a very thin circular shape (approx 10 cm in diameter) with a rolling pin on a flat surface like the thoroughly clean platform of your kitchen. Pour 1 tsp melted ghee/oil into the centre of each and spread lightly with your fingers on the rolled out discs. With a knife, make a cut from the centre of each circle to the outer edge. Starting the at the cut edge, roll the dough closely into a cone shape. Pick it up and press the apex of the cone and base towards each other and flatten slightly. You will now have a small roughly circular piece of dough again.
3. Lightly flour the rolling board(girda)/platform again and roll over the dough with the rolling pin(belan) very gently, taking care not to press too hard and make them too thin. Sprinkle extra flour if needed while rolling. Cover the rolled out discs with a kitchen towels to prevent them from drying out.

4. Heat a flat griddle/tawa on medium high heat. Once it is hot, put the rolled out disc on the heated griddle. Let it cook for 1 minute. You will notice small bubbles on the disc. Flip it with a rubber spatula or a flat spoon which you have and again cook it on the other side for a further 1/2 minute.
5. Now quickly brush it liberally with 1 tsp oil/ghee using a silicone basting brush or a teaspoon all over, and flip it over again and cook for a few seconds. Again, working quickly, spead the ghee/oil over the other side too and flip it to cook that side and remove into a plate lined with a paper towel. Keep stacking them over one another and cover the dish with a towel to keep them warm. I have a Milton hotpot/casserole which I had bought from India, and I use it to keep the Parathas warm until I finish cooking all.

Butter Chicken with no Butter – Makhani Murgh

Butter chicken is one of the famous North-Indian dishes that made its way on the menu card of almost every Indian restaurant all over the world. Each person/household has their own style of cooking this delectable dish, but I prefer this procedure, its simple, healthy and gets prepared soon, and its delicious.

Butter Chicken – Makhani Murgh

Butter Chicken can be enjoyed along with parathas, naan or with plain rice.

Butter Chicken – Makhani Murgh
Serves: 6-8

Ingredients:

For Marinade
Chicken – 1 (large) whole, cut into pieces
Ginger garlic paste – 1 tbsp
Yogurt (thick) – 1/2 cup
Red chilli powder – 1 tsp
Salt – 1 tsp
Turmeric powder – 1/4 tsp
Lemon juice – 1 tbsp
For Curry
Cloves – 3
Green Cardamom – 4
Cinnamon stick – 2 inch long stick
Ginger garlic paste – 1 tbsp
Fresh tomato puree – 5-6 cups
Red chilli powder – 2 tsp
Salt – 2 tsp
Half and half – 1 1/4 cups (or) equal amounts heavy cream or light cream
Garam masala – 1 tsp
Kasoori methi – 1/4 cup
Canola oil

Method:

1. Mix all the ingredients under the heading ‘for marinade’, and keep aside for 2-3 hours or overnight. Bring it back to room temperature before you start cooking. Heat a stove top grill pan and grill the marinated chicken pieces until lightly charred on both sides. Baste with canola oil whenever needed.
If using boneless chicken, marinate them as above directions. Skewer them onto bamboo skewers and grill them both sides until charred as shown here.
You can even grill the chicken on a charcoal grill for best flavors.
Cover and keep the grilled chicken aside in a bowl.
2. Heat 3 tbsp oil in a saucepan, add cloves, cardamoms, and cinnamon stick. As the spices begin to sizzle, add ginger garlic paste and stir fry for a few seconds. Add pureed tomatoes, red chilli powder, salt. Cover and let it cook until the puree is thick. Give a stir every once in a while. Add half and half or whatever using and let it come to a boil. Once boiling reduce heat and add the grilled chicken, kasoori methi, garam masala and water according to the consistency of the curry you desire. Cover and let cook until the chicken is tender and thoroughly cooked. Transfer to a serving dish and garnish with drizzles of cream.

Suggested Accompaniments: Parathas, Naan, Basmati Chawal, Pulaos.. or even in between toasted bread as sandwiches.

I had learned this recipe during my college days in Hyderabad. I had found it very unique and delicious. I treasure this recipe. Its easy, simple and gets ready quite quickly. Enjoy the poori’s with Rajma curry and you will never forget this dish for its good taste. Enjoy.

Palak Poori – Unleavened Fried Indian Puffed Spinach Bread

Makes approx 15 Pooris

Ingredients:

Wheat flour (Durum Atta) – around 2 cups (You can even use Refined flour/All-Purpose flour if you wish)
Spinach (fresh or frozen) – 300 gms
Yellow Onions – 1 small, chopped
Milk – as needed
Salt – to taste
Small Green chilli – 4, chopped
Canola Oil – to deep fry poori’s

Method:

  • Heat oil in a pan and saute the onions till soft. Add spinach and green chillies, salt and cook well till dry (It is important that the it is pretty dry after you cook it as if left watery, you will not be able to make a proper dough later) Puree into a paste in a food processor of a blender and keep aside.
  • Put 1 cup flour in a bowl. Make a well in the middle and add spinach paste in the center. Use one hand to mix the flour with the added mixture in a rotating motion from the center of the bowl outward, until the dough is moist enough to be gathered into a rough mass. Keep adding extra flour as needed. Sprinkle milk if needed to the dough and continue to knead it. Wet hands and continue until the mixture cleans the sides of the bowl and has become a nonsticky, kneadable green coloured dough. When the dough is kneaded, it will be elastic and silky smooth. To test the dough, press it lightly with a fingertip. If it springs back, it is ready to be rested. Resting the dough is the last step and allows the dough to relax and absorb the water and kneading.

The Prepared Dough

  • Rest for 1/2 hour in warm climates and 1.5 hours in cold climates. Cover with a wet towel so the dough does not dry out. The rested dough is light and springy, less resistant to being rolled out into the thin rounds.
  • Knead dough a little again. Dough should be stiff enough to roll without extra flour.
  • Make small balls (approx 4 cm in diameter) of the dough and cover them with damp cloth.
  • Take one ball of dough and dip a corner of ball in melted ghee or oil and roll it out into 4 to 5 inches round.
  • Repeat the same process to roll out all puri’s.
  • Heat plenty of oil in a kadhai/wok until very hot.
  • Put in a poori and immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball.
  • This should take only a few seconds. Flip the poori over and cook the other side until golden brown.
  • Remove with a slotted sppon and stack them vertically untill all are done in a bowl lined with paper towel to absorb the oil.

Suggested Accompaniments: Enjoy the puris along with Red kidney beans curry.

Tip: Store the left-over dough in a ziplock bag in the refrigerator for upto 1 week so that you prepare it again after some days.

A warm welcome to everyone on my blog!

This is my first post, and I start this blog attempting to make an insight into the method of home-style cooking in the Hyderabadi households for the whole world, and to make friends in the blogging world, which I loved since I had started to read recipe blogs of different people, who share interests like me, love to cook food and discover new ways of cooking food.

Chicken croquettes are loved by everyone, and is a hit with children and adults too. This recipe is an appetizer specifically, but you can have it anytime, as you want. Its an easy recipe that gets prepared in a jiffy and it tastes like melted cheese once you bite into it. Serve these hot as soon as you prepare them as they do not taste very good when cold. Enjoy them along with any of your favourite sauces. You will definitely love them.

Chicken Croquettes

Chicken Croquettes

Ingregients:

Shredded cooked Chicken – 1 cup
All-Purpose flour/Maida – 4 tbsp
Butter – 1 tbsp
Milk – 1/2 cup
Egg – 1
Bread crumbs – 1/2 cup

Method:

1. If you have any left over chicken, shred it and you can use it, or u can take some boneless chicken and fry it in oil, salt, red chilli and little water to make it soft. Once the chicken is soft, shred it, not too finely.
2. Now take a non-stick pan, melt butter, add maida and brown it well enough, but not too much. Add milk to it, and stir it so tat it forms a good paste, add more milk if it requires, let it not form onto lumps. Let it cool down a little bit. Once it is cool, add the shredded chicken and mix well. Keep this mixture in the refridgerator for 15-30 minutes, so that it hardens a bit.
3. Later, remove it from the fridge and make balls (croquette shaped)
4. Beat an egg in a cup.
5. In an another plate keep the bread crumbs.
6. Dip the balls into egg first, then in the bread crumbs, till it is properly covered, pat and remove the crumbs from the balls if excessively covered.
7. Deep fry the balls till nicely golden brown in colour Serve hot.
